Lava bem as lulas e corta-as em tiras. Salteia-as num decilitro de azeite, junta-lhe o camarão e os alhos esmagados. Tempera com sal e pimenta. Passa o feijão por água corrente e escorre-os. Lava os espargos e corta-os em pedaços. Coze-os em água temperada com sal; escorre-os e passa-os por água fria. Reserva. De seguida, mistura o sumo de lanranja e a mostarda. Adiciona-lhe o restante azeite em fio, sem parar de mexer. Tempera. Envolve o feijão com os espargos, o camarão e as lulas.
